Sakona Coffee Roasters found its home nestled on the slopes of Mount Jaizkibel, within the iconic Circular Building on Burniola Street in Irún back in 2015. We were particularly excited about being seen roasting from the street. The presence of our Probat UG15 roaster, visible in action from the sidewalk beside Sakona´s HQ, has sparked numerous memorable encounters with curious passersby over the years.

Sakona emerged in 2015 as the natural culmination of founder Javier García Fúnez’s extensive professional journey and dedication.

Bringing together two of his greatest passions, Sakona is driven by a singular objective: to serve and offer delightful coffees, introducing customers to a fresh coffee experience where each cup reveals the nuances of seasonal fruit, delivering clean and delightful flavours. These two key elements that lead Javier to create a project like Sakona are customer service and specialty coffee.

Behind Sakona

After over a decade of tending bars and counters across various hospitality settings, Javier’s journey took a transformative turn when he discovered the vast array of flavours, qualities, and coffee trading methods through Barista competitions.

Having clinched his first of five victories in the Spanish Barista Championship in 2008, it was during his inaugural participation as the Spanish representative at the World Barista Championship in Atlanta, USA in 2009 where Javier experienced a revelation that would literally alter the course of his life. Sampling different coffees from Central American producers at the accompanying fair and a few sips of a Pacamara variety coffee from a Salvadoran estate were enough to unveil to him a completely different world of taste – it tasted like fruit!

In that pivotal moment, Javier realized that to further explore this new realm, it was essential to continue competing, thereby providing him with the opportunity to participate in the global championships and engage with individuals from diverse countries and cultures who shared a common passion for specialty coffee.

As a result of this dedication and experience, Javier secured five titles as the Spanish Barista Champion (2008, 2009, 2010, 2011, and 2014) and achieved fourth place globally at the 2011 World Barista Championship held in Bogotá, Colombia.
