The Swiss Water® method is a 100% natural decaffeination technique developed in Switzerland, which uses only water, temperature, and time to remove up to 99.9% of the caffeine from the coffee bean, without the need for chemical solvents like methylene chloride or ethyl acetate.

Through a process of osmosis and filtration, green beans are immersed in hot water to release the caffeine. Then, this water—rich in soluble coffee compounds—is passed through an activated carbon filter that traps only caffeine molecules, preserving the natural aromas and flavors of the bean intact.
