San Manuel - Colombia

In the southeastern tip of the department of Huila lies San Manuel, a municipality with a temperate climate and mountainous geography, where agriculture is the heart of daily life. Small plots of coffee are cultivated on its slopes, mainly with varieties such as Caturra, Colombia, and Típica, totaling more than 1,850 hectares planted by farming families who have inherited the trade generation after generation.

San Manuel coffee is renowned for its high quality and balanced profile, featuring bright acidity, sweet and fruity notes, and a medium body that makes it particularly appealing to specialty coffee lovers. It is part of the Huila Coffee Denomination of Origin, a seal that guarantees its authenticity and prestige. Each bean is carefully hand-picked by local community members, ensuring that only the ripest and most representative fruits from the area reach the cup. 

ABOUT THIS COFFEE:

The harvest in Huila is done entirely by hand and selectively, picking only ripe cherries based on their color. An initial selection is made in the field to remove unripe or overripe fruits, and transport to the processing facility is done the same day to avoid unwanted fermentations. Buyers recognize this care by paying an additional premium for the delivery of clean cherries at optimal ripeness.

At the processing facility, each lot is weighed, coded, and quickly de-pulped to preserve quality. Then, defective beans are separated by density, fermented for 12 to 36 hours to remove the mucilage, and washed with clean water before a final classification by weight and size. Drying is done on raised beds under canopies, ensuring uniform ventilation and reducing the risk of mold, until reaching a moisture content of 10–11%. This meticulous process ensures high-quality coffee with a clean and balanced cup.
