Jonathan and John Gasca, fourth-generation coffee growers, have dedicated themselves to mastering specialty coffee and exploring its flavor potential. ABOUT THIS COFFEE:
This lot, a Colombian variety, undergoes a meticulous three-stage fermentation: it begins with an oxidative rest, followed by pulping and additional oxidation, and ends with 40 hours of submerged anaerobic fermentation with must recirculation. The coffee is sun-dried under a canopy and mechanically finished in a silo, then rested for at least 10 days.
